Zengo’s Test Kitchen Menu Wows Us Again

Zengo, a Richard Sandoval restaurant that has an ever-changing menu has wowed the people again. The chef and his amazing culinary team test recipes every few months in the test kitchen. Here is where they create works of art, symphonies of flavors, and delectable dishes to be highlighted on the menu. Each month, they explore Latin cuisine and Asian cuisine in depth to showcase flavors of the cultures to create you one very amazing menu. The menu for the coming months will showcase Japan and Mexico.

We began with Octopus Aguachile Tiradito, a dish that was almost too pretty to eat (the keyword being almost!). The octopus was sliced so thin it was almost transparent. Topped with ginger green chili broth, white soy, avocado, and Asian pear, this dish is the perfect appetizer to get the palate going.

The Achiote Shrimp Tempura Roll with charred scallion was delightfully playful and fun. The Chile Toreado Aioli added some nice spice to this dish. Both these appetizers go very well with the Shiro Margarita, made with Nigori Sake, Agavales Blanco Tequila, and fresh lime juice.

Next came a slightly spicy small plate with huge flavor. The Terikayi Pork Belly Gorditas “sliders” have a bold kick that’s cooled off by the shiro margarita. Topped with guacamole, Oaxaca cheese, pickled chiles, and caramelized pineapple, this dish is the perfect light bite to kick off a delicious evening.

As for the large plates, Kabayaki Glazed Lamb Shank Barbacoa is a must order. This lamb is perfectly cooked, the meat falls right off the bone so you are able to dig right in. Alongside this dish are pickled vegetables that add a nice touch to the sweet meat. The Calamansi Old-Fashioned is a sweet cocktail that goes great with this dish.

At Zengo, you should absolutely save room for dessert. The Avocado Panna Cotta is stunning, with tropical fruit salad and peanut butter chocolate cookie crumbs. This dish is one you will want to try, as it is creamy, sweet, and somewhat savory.
