Creative in the Kitchen with Safe + Fair Birthday Cake Granola

I became so obsessed with Safe + Fair’s allergen-free granola that I knew I had to experiment with it in the kitchen. Their Birthday Cake flavor is so addictive, I need them to start a subscription service so I can just always be fully stocked. In addition to using it as a topping on yogurt, smoothie bowls and in cereal, I’ve come up with a super yummy cookie recipe and a variation on Rice Krispie Treats using the granola. Birthday Cake Granola Cookies

Ingredients:

1 egg

1 egg yolk

¼ tsp. Salt

¼ cup confectioners sugar

1 cup Safe + Fair Birthday Cake Granola, ground

1 tsp. Baking soda

¾ of ½ cup butter, melted and cooled to room temperature

⅛ cup sprinkles

¾ cup flour

½ tsp. Vanilla extract

 

Vanilla Drizzle Ingredients:

1 cup confectioners sugar

⅛ tsp. Salt

½ tsp. Vanilla extract 

6 tsp. Whole milk

1 tbs. butter

Directions:

  1. Measure a little over a cup of Safe + Fair Birthday Cake Granola, add to a food processor, and grind until it turns into a powder, until you have one cup, ground.
  2. In a medium bowl, add ground granola, sugar, salt, baking soda and flour. Mix until blended.
  3. Add in eggs, butter, and vanilla and stir until combined. Add in sprinkles and mix well. Place batter in the refrigerator for 1-2 hours or in the freezer for 15-20 minutes to firm up. Preheat the oven to 375℉.
  4. While the dough is cooling, in a small bowl, add all of the vanilla drizzle ingredients and stir until smooth. Set aside.
  5. Take small portions of dough and roll into balls, placing on a greased, buttered or oiled cookie sheet, placing 1-2 inches apart. 
  6. Place in oven and bake for 10 minutes or until golden brown and let cool.
  7. Once cookies are completely cool, dip the tops of the cookies into the bowl of drizzle, add sprinkles, and let set. Enjoy!

Yield: 10 cookies

marshmallow-granola-treats

Marshmallow Granola Treats

Ingredients:

2 cups Safe + Fair Birthday Cake Granola

1/4 tbs. butter

1 3/4 cups marshmallows

Sprinkles

Directions:

  1. Melt butter in a pan over medium heat and then add in the marshmallows, stirring until they are fully melted.
  2. Add in the granola and combine until mixed.
  3. Take a small pan and line with wax paper.
  4. Remove granola mixture from stove and spread evenly in pan. Use another piece of wax paper to press down on the top and make and even layer in the pan. Add sprinkles to the top. Let cool.

Yield: 9 treats
