The Lower East Side Sausage Series: The Mouthful You Didn’t Know you Needed

Four NYC powerhouse brands have joined together to celebrate the opening of the food market at Essex Crossing, a long-awaited destination for housing, dining, and entertainment on the Lower East Side of Manhattan.

Egg Shop, Cafe Select, and The Flower Shop have each teamed up with New York sausage icon Schaller & Weber to develop a unique recipe reflecting their ongoing menu, showcasing a trio of flavor that represents each of these Lower East Side staples.

“Given that the Schaller & Weber story all began with a sausage-making apprenticeship by my teenage grandfather, the choice of sausages for this collaboration was a natural one,” says Jeremy Schaller, the third generation owner and sausage maker of Schaller & Weber. Schaller’s sausages are not only delicious, but the business is deeply rooted in a classic New York CIty immigrant story, making this next step in their legacy an emotional, as well as an exciting one. 

The team at Egg Shop has been innovating in the breakfast space for years, so it was no surprise this sausage was a hit. Executive Chef Nick Korbee combined maple syrup, floral sage, and a touch of heat for a spectacular breakfast sausage.

The Flower Shop, a Lower East Side late night staple, is mostly known for its eclectic Australian menu and great music. In creating their “Aussie Snag,” Executive Chef Michael Hamilton melds pork with confit garlic and savory herbs like sage and paprika for a super flavorful punch.

The offering from Cafe Select also drew on a personal history to develop their recipe. Founder Oliver Stumm wanted to recreate his homeland’s famous St. Galler Bratwurst, a Swiss classic. This sausage was a mixture of pork and veal, blended with milk, lemon zest and just a hint of baking spices to make for a well balanced sausage. It was my favorite of the night.
